Proofing is a step in bread making that activates the yeast in the dough and causes the dough to rise. Dough can either be warm proofed at 75 degress or cold proofed at 50 degrees. Be sure the dough has ample room to rise. The basket is 8.9" in diameter and 3.3" high and comes with a fabric liner. Use with the liner if you want the dough to have a smooth crust, or use withouth the liner if you want the bread to have the basket ridges as part of the crust.
